What do do with your large pattypan?

You can use a large pattypan like you would a large zucchini – veggie steaks on the BBQ, baking, slicing and sauteeing…. but my favourite way to prepare the large summer squashes is stuffing them. I think I had a chance to tell everyone how to do it but in case you didn’t catch it all here’s what you do:
Cut a little hat off the squash, like you would a pumpkin.
Scrape out the insides and fry them up in a pan with ingredients such as: garlic, onions, cheese, bacon, bread crumbs, tomatoes, more squash (in the photo I threw in some beets)…
Put the stuffing back in the squash and put it on the BBQ or in the oven for about 20 minutes. You can eat the whole thing – skin and all – a bit like a pie!

Fresh ideas for Tomatoes….

Inspired by a CSA member last week, I decided to make some salsa this week. With your basket, consider making a fresh salsa using some simple ingredients: tomatoes, peppers, onions, and some cilantro if you have some. Italian parsley would be a nice addition. I added a bit of vinegar to mine and canned it for the winter, but before I cooked it down, check out what a beautiful fresh salsa you can make!

Grilled Peppers and Cherry Tomatoes

1 Tbsp. Kosher Salt
Sweet Peppers
Cherry Tomatoes

Boil a pot of water and add the kosher salt. Soak several skewers in a bowl of water for 30 minutes. Add your whole peppers to the boiling water and cook for a few minutes until tender. Watch that they don’t over cook. Thread on skewers with cherry tomatoes. You can add some marinated shrimp on the skewer as well! Grill on the BBQ.
